The Panama Canal is an artificial 48-mile waterway in Panama that connects the Atlantic Ocean with the Pacific Ocean. The canal cuts across the Isthmus of Panama and is a key conduit for international maritime trade. The Canal uses a system of locks -compartments with entrance and exit gates. The locks function as water lifts: they raise ships from sea level (the Pacific or the Atlantic) to the level of Gatun Lake (26 meters above sea level); ships then sail the channel through the Continental Divide. Each set of locks bears the name of the townsite where it was built: Gatun (on the Atlantic side), and Pedro Miguel and Miraflores (on the Pacific side). The lock chambers -steps-- are 33.53 meters wide by 304.8 meters long. The maximum dimensions of ships that can transit the Canal are: 32.3 meters in beam; draft -their depth reach- 12 meters in Tropical Fresh Water; and 294.1 meters long (depending on the type of ship). The water used to raise and lower vessels in each set of locks comes from Gatun Lake by gravity; it comes into the locks through a system of main culverts that extend under the lock chambers from the sidewalls and the center wall. The narrowest portion of the Canal is Culebra Cut, which extends from the north end of Pedro Miguel Locks to the south edge of Gatun Lake at Gamboa. This segment, approximately 13.7 kilometers long, is carved through the rock and shale of the Continental Divide. Ships from all parts of the world transit daily through the Panama Canal. Some 13 to 14 thousand vessels use the Canal every year. In fact, commercial transportation activities through the Canal represent approximately 5% of the world trade. The Canal has a work force of approximately 9 thousand employees and operates 24 hours a day, 365 days a year, providing transit service to vessels of all nations without discrimination.

The Central Pacific's largest city, Puntarenas sits on a long, narrow peninsula in the Gulf of Nicoya. For years, it was the country's principal port, and although a newer port in nearby Caldera now handles cargo and Puntarenas the cruise ships, a large fishing fleet still anchors in the estuary behind town. Being the country's most important fishing port, Puntarenas is the perfect place to enjoy fresh seafood, be it camarones al ajillo (shrimp scampi), pescado entero (a whole fried fish), or ceviche de corvina (bits of fresh fish marinate in lime juice with onions, peppers and spices).

Easy access draws many to Tikal National Park, a wonderland of Mayan culture. A series of stone temples dating back to 700 AD--including the Temple of the Two-Headed Snakes--stretch above the treetops, daring the fearless to climb up and enjoy the views. Zihuatanejo (see wah tah NAY ho) is located in the Municipio of José Azueta (aka Zihuatanejo de Azueta) in the state of Guerrero on the Pacific Coast of Mexico about 240km (approx. 144 miles) northwest of Acapulco. The modern tourist resort of Ixtapa (eeks TAH pah) is only 5km away. Zihuatanejo is the seat of government for the Municipio and the principal community in the region. Ixtapa is a government-planned tourist resort that was begun in the early 1970's and constructed on what was once a coconut plantation and mangrove estuary. The approximate population of Zihuatanejo-Ixtapa is 50,000 inhabitants (source: INEGI). Zihuatanejo has the old-fashioned charm of traditional Mexican culture. It is a town that sprang up from a handful of families who were mostly fishermen. Fishing continues to be a way of life for a large number of families, and the increasing popularity of the area as a sportfishing destination has given new impetus to their livelihood. Until the early 1970's Zihuatanejo was a sleepy fishing village with only a handful of families and residents. It was then (and continues to be) a favorite getaway for Mexican vacationers and adventurous foreigners. Zihuatanejo's main attraction is its well-protected bay where travelling boaters often spend the winter months moored in its peaceful clear waters. The bay offers various beaches for relaxation, recreation, dining, or simply enjoying the abundantly beautiful scenery and laid-back local lifestyle. The main part of downtown Zihuatanejo (referred to as "El Centro") is still rather old-fashioned with narrow streets made of paving-stones and where most people still walk to get around. The locals (and frequent visitors) still greet each other in the streets, causing a simple stroll around the block to sometimes take quite a while as they get caught up on the latest local gossip (a favorite pastime). Mariachis and various troubadours can be found at all the beaches and restaurants and will serenade you to romantic splendor. Their prices vary and are negotiable. They can be hired for private events or simply to serenade a loved one (an old tradition here). Their music fills the air like the scent of fragrant flowers! So please leave your boombox at home! Be sure to ask for the song "Zihuatanejo".

Cabo San Lucas, where the sea, sun and desert join to cast an air of mystery and romance over all who visit. Cabo was once a tranquil fishing village and, in times long ago, a hangout for pirates. Although no longer the fishing village of old, and not many of the old pirates are seen around town any more, the magic of Cabo remains. Cabo is still small and charming by any standards, with a population of under 30,000. We do have 4 stop lights now. And with the number of activities available to the visitor, you could easily imagine you are in a giant amusement park. Cabo has come of age. Located at the southernmost tip of the magnificent Baja peninsula, Cabo has been blessed with what many describe as the perfect climate. They flocked here to be near "Marlin Alley", as the waters around Cabo have often been described. The name is well deserved, as Cabo San Lucas is the undisputed billfish capital of the world. But Cabo is far from remote these days, and the attraction of this magical spot is no longer limited to marlin fishing. Cabo can be, many different things to people. Cabo San Lucas has become known as a perfect vacation spot for the entire family. Cabo can be as quiet, romantic and relaxing as any secret hideaway. It can also be as lively as anyone can possibly imagine. If your wish is to enjoy a quiet candlelight dinner, "muy romantico", beside the shimmering sea for just the two of you, we have some of the most romantic dining spots on the face of the earth. If golf, water sports, boating, fishing, ATV's, horseback riding and numerous other activities are what you seek, they're all here, waiting for you. If "party till you drop" is the mood of the evening, Cabo has got it for you, big time!

You will also enjoy a wide variety of nightly selections such as filet mignon with black truffle sauce. With its elegant yet lively dining and renewed décor, it's easy to see why this restaurant is the culinary heart of the ship. Reservations are not accepted. It offers an elegant yet lively dining scene with a rotating menu inspired by the destinations on your voyage.

Aqualina: At Aqualina, you'll find some of Italy's most celebrated dishes as well as contemporary inventive cuisine. Start with lobster ravioli, followed by arugula and radicchio with prosciutto chips, and a Venetian seafood platter. You won't be able to say no to these famous desserts: marsala custard, lemon soufflé, or tiramisu. The chefs love to be inspired, so after an on shore visit to a local market, you can also expect a delectable dish so local, you'll feel like you're not onboard anymore.

Prime C: At Prime C, you're in for more than an array of delectable dining such as steaks cooked to perfection, crab cakes with remoulade, lobster bisque, lamb, game hens and seafood. Last but certainly not least, try the mini cinnamon-sugar donuts with dipping sauces for dessert. Expect a marvelous evening in a warm wood-paneled ambiance with stunning views and lush décor. If the chef has made a visit to a local market while in port, you'll also have an authentic local dish to look forward to.

Specialty Dining: Specialty dining is complimentary for suite guests. For others, there is a $30 per-person cover. Reservations are highly recommended. Due to the popularity of our specialty restaurants and regard for your fellow guests, a $15 late cancellation fee will be charged to your guest folio if a booking is not canceled by noon on the day of your reservation.

We also create an extra live station made from local ingredients purchased in port: Greek salad made with local feta (Greece), pasta prepared with local mushrooms (Italy), fresh Mussels served with garlic bread (Netherlands).
