Hazen has worked in some of the world's most celebrated kitchens throughout his career. Upon graduating from the Culinary Institute of America in 1982, Hazen worked his way up to sous chef at the iconic La Côte Basque, under the watchful guidance of famed chef Jean-Jacques Rachou. Shortly thereafter, Hazen served as roundsman at the 4-star Quilted Giraffe in New York City. Following his tenure at Quilted Giraffe, Hazen was appointed chef de partie at Albert Roux's three-star Michelin restaurant, Le Gavroche, in London. Working in Le Gavroche's kitchen allowed Hazen to showcase his classical training and further refine his technique. In Britain he also spent time in the kitchen of Raymond Blanc at Manoir au Quat Seasons and Michel Roux's Waterside. His European travels also included a stage at Marchesi in Milan before returning to the States as Executive Chef of Terrace in the Sky. A desire to share his experiences brought him back to the CIA as a chef instructor. Teaching proved a fulfilling experience. Hazen taught Skill Development, Experimental, Restaurant Caterina de Medici, and adult education classes, loving every minute. Chef Hazen has traveled widely to learn firsthand the artistry in preparing ethnically and culturally inspired dishes keeping true to time tested traditions. Research for Tao took Hazen to Tokyo, Hong Kong, and Bangkok where he attended cooking school. When creating an Italian menu for Bolzano's, he went straight to the source, studying with the legendary Benedetta Vitali at her Zibibbo restaurant in Florence. Sam has consulted for a myriad of restaurant groups and hotels, creating upscale dining establishments in four-star hotels, on the high-end register to fun food trendy, burger bars, breweries, brasseries and even a Baja style cantina on the populist side of food service. Hazen is a chef's chef with contacts around the globe, from working and training alongside cooking world notables and mentoring many of the country's rising stars. To remain fluid as well as experienced, Hazen embraces lifelong learning. At home in New York he plumbs his Mediterranean roots and embraces all American local slow cooking. After an amazing run at Veritas, Chef Sam Hazen joined on as culinary director at BR Guest in New York City. Sam Hazen's true genius is in driving profitability with brilliantly conceived menus that perfectly suit the taste, space, and pace of the restaurants he has launched. Ft Lauderdale is a city of islands held together by an intricate web of canals, rivers, bays and waterways hundreds of miles long. Needless to say, boating is a favorite city pastime, whether zooming along on a speedboat, enjoying a fishing charter, or cruising the coastline by yacht. Beautiful homes of every size and style make up the bulk of this primarily residential area. By the beach, a leisurly stroll can be taken along the new landscaping wavewall design of the beachfront promenade. But this city is anything but sedate. Once a spring break hot spot, the town still has an energetic and colorful nightlife. Nearby, charming Laudrdale-By-the-Sea is home to one of the only living coral reefs in the US accesible from shore. Las Olas Boulevard, a shoppers paradise, is the chic new shopping and trendy dining area of downtown. If sports are more your inclination, dozens of golf courses and hundreds of public parks allow you to absorb the great Florida outdoors. Cultural arts are also popular. Water taxis bring theater-goers from throughout the city to the Performing Arts Center on the water.

Overview

Located just 50 miles of the east coast of Miami is the tiny fishing paradise known as Bimini.Bimini is not only the nearest (hence the name gateway) and most accessible island by boat, but also the smallest of the 700 islands in the archipelago called The Bahamas. The island is rich in history and has played host to famous persons from as far back as Ponce de Leon, the Spanish Explorer who came in search of the Fountain of Youth in 1513. Bimini was the first island in the Caribbean to have a casino, The Bimini Rod & Gun Club, the remnants of which today serve as a home. Bimini is hardly a palm fringed paradise. Abundant casuarina trees and older homes give it a summer camp look. And the rustic bars and hotels that cater to the loads of game fishermen, divers & snorklers lend Bimini a slightly honky-tonk atmosphere. But the exotic of the tropics is never far from her coasts. Divers are all over the shallow turquoise waters, and glass bottom boats load up passengers to view "Atlantis" off North Bimini's Paradise Point.

Overview

Belize City is located in the heart of the country. From there you will be able to make your connection to everywhere else you want to go; from taking a bus to go north and visiting the Community Baboon Sanctuary, Crooked Tree Wildlife Sanctuary and other attractions to catching a boat to the Cayes to taking a bus to visit relaxing Placencia, the adventurous Cockscomb Basin, the only Jaguar Reserve in the world to the mysterious archaeological sites such as Caracol and Xunantunich and the interesting Mountain Pine Ridge area. Not only is Belize City your gateway to mystic Maya Sites (only found in Central America), adventurous caves, rivers, unique flora, fauna and relaxing breathtaking beaches, but it is also filled with history. Belize City has the only manual swing bridge in the world which is still being swung daily. The oldest Anglican Cathedral Church in Central America, St. John's Cathedral, was built in 1812 from bricks brought as ballast from European sailing ships. Over the years, Government House (now the House of Culture Museum) was used as an administrative office and living quarters for the governors of Belize. This was built in early 1800 with a combination of Caribbean Vernacular and English Urban architecture. The Lighthouse monument at Fort George Point towers over the harbor entrance. This was built form money donated to the country by Belize's greatest benefactor - Baron Bliss, the 5th baron of Portugal. At his request, he was entombed in front of the lighthouse which he designed himself prior to his death. City tours are available offering in-depth history of the city.

Overview

The beautiful island of Cozumel, the largest inhabited island in Mexico, is a paradise for divers from all over the world. The island is surrounded by more than 25 reef formations where divers of all ages and skills can enter into a completely fascinating and different world: endless coral inhabited by immense shoals of colorful fish. The possibilities are interminable for both beginners and experts. East of the Yucatán Peninsula, on top of the age-old structures of the Mayan coral reef, the second largest in the world, stands the Island of Cozumel, the largest inhabited island in Mexico. Its name, derived from the word Cuzamil, meaning “island of swallows” in Maya, conjures up memories of its pre-Hispanic origin, the conquest of America and the pirates and buccaneers that thronged its seas. The Island of Cozumel measures 48 km from north to south but only 16 from east to west. On either side of the island, beaches form a long, white sandy coast. Gentle waves and transparent waters wash the western side of the island, while huge waves crash against the eastern side. Its flora and fauna have a number of unusual features and include certain endemic species, such as the dwarf raccoon and the Cozumel wren. Cozumel’s greatest wealth, however, lies underwater.
