Overview

Ft Lauderdale is a city of islands held together by an intricate web of canals, rivers, bays and waterways hundreds of miles long. Needless to say, boating is a favorite city pastime, whether zooming along on a speedboat, enjoying a fishing charter, or cruising the coastline by yacht. Beautiful homes of every size and style make up the bulk of this primarily residential area. By the beach, a leisurly stroll can be taken along the new landscaping wavewall design of the beachfront promenade. But this city is anything but sedate. Once a spring break hot spot, the town still has an energetic and colorful nightlife. Nearby, charming Laudrdale-By-the-Sea is home to one of the only living coral reefs in the US accesible from shore. Las Olas Boulevard, a shoppers paradise, is the chic new shopping and trendy dining area of downtown. If sports are more your inclination, dozens of golf courses and hundreds of public parks allow you to absorb the great Florida outdoors. Cultural arts are also popular. Water taxis bring theater-goers from throughout the city to the Performing Arts Center on the water.

Overview

If you've ever dreamed of making the first footprints on the beach of a truly secluded tropical island, you'll have your chance on Half Moon Cay, Holland America's own private island in the Bahamas. Swim, snorkel and sail till the beat of a steel-drum band summons you to the beach party and buffet. Cast off your everyday cares on sunswept beaches as you play the day away.

Overview

Ocho Rios, or "Ochee" as it is known locally, has experienced such explosive growth over the last decade that few people can recall the sleepy fishing village, bauxite port and stream-laced nirvana that once existed. Today it is a high density town of concrete hotels, condominium complexes, office blocks, multiple shopping centers and extreme traffic congestion but still one of the favorite cruise ship ports in the Caribbean. The economy of the town is based almost entirely on tourism.

Overview

Miles of powdery white beaches above clear blue water and one of the richest marine environments make Grand Cayman one of the Caribbean’s finest vacation destinations (and a world class scuba diving destination). As a British Crown Colony, Grand Cayman enjoys all of the benefits of sophisticated government, touting one of the strongest economies in the Caribbean (with over 600 banks) while still allowing visitors to enjoy duty free shopping in Georgetown for jewelry, art, local crafts, and unique souvenirs like treasure coins from a sunken Spanish galleon circa the “Pirates of the Caribbean” era.

Overview

The beautiful island of Cozumel, the largest inhabited island in Mexico, is a paradise for divers from all over the world. The island is surrounded by more than 25 reef formations where divers of all ages and skills can enter into a completely fascinating and different world: endless coral inhabited by immense shoals of colorful fish. The possibilities are interminable for both beginners and experts. East of the Yucatán Peninsula, on top of the age-old structures of the Mayan coral reef, the second largest in the world, stands the Island of Cozumel, the largest inhabited island in Mexico. Its name, derived from the word Cuzamil, meaning “island of swallows” in Maya, conjures up memories of its pre-Hispanic origin, the conquest of America and the pirates and buccaneers that thronged its seas. The Island of Cozumel measures 48 km from north to south but only 16 from east to west. On either side of the island, beaches form a long, white sandy coast. Gentle waves and transparent waters wash the western side of the island, while huge waves crash against the eastern side. Its flora and fauna have a number of unusual features and include certain endemic species, such as the dwarf raccoon and the Cozumel wren. Cozumel’s greatest wealth, however, lies underwater.

And, every evening in this venue offers a chance for you to experience the signature recipes of Culinary Council Chef David Burke. Canaletto: This authentic Italian restaurant offers a menu that celebrates spartire (Italian for "sharing"). Try Braised Chicken Cacciatore "al Forno" Branzino ai Ferri or a classic Italian pasta: spaghetti pomodoro or garlic shrimp-infused ravioli, perhaps. Buon appetito! This restaurant is available for an additional cost.

Rudi's Sel De Mer: Named for Master Chef Rudi Sodamin, Rudi’s Sel de Mer is an intimate brasserie featuring classic French dishes reimagined with contemporary flair. Menu selections include whole Dover sole meunière with shaved pink Himalayan sea salt, oysters on the half shell, fruits de mer, and salt-crust baked branzino, as well as favorites such as steak frites, duck cassoulet and coq au vin. Conclude your dinner with a classic dessert and fine French cheeses. This restaurant is available for an additional cost.

Tamarind: Tamarind delights with exotic menus evoking the culinary traditions of Southeast Asia, China and Japan. Menus created by Master Chef Rudi Sodamin feature dishes honoring the elements of water, wood, fire and earth. This restaurant is available for an additional cost.

Nami Sushi: Inspired by Culinary Council® member and world-renowned sushi master, Andy Matsuda, Nami Sushi offers a tempting array of the sushi rolls he’s created. Choose from such delectable selections as Tempura Lobster Roll with soft shell crab tempura; Dragon Roll with tempura shrimp, unagi sauce and avocado; Tsutsumi Roll with snapper, green olive, caper and avocado; Futomoki Roll with crab, yamagobo, avocado and cucumber; Volcano Roll with sesame-marinated salmon and Thai chilis; Nigiri sushi with tuna, salmon and ebi shrimp; and more.
